Mini Blueberry Muffins for Dogs

Ingredients:

  • Non-stick olive oil cooking spray

  • 1 Cup whole wheat flour

  • 1 Cup old-fashioned oats

  • ½ Cup sugar free all-natural applesauce

  • 2 Tablespoons water

  • 2 Large eggs (yolks will be separated from egg whites)

  • 1 Cup blueberries (fresh or frozen)

Directions:

  1. Preheat oven to 350° F. Lightly grease a mini muffin pan with olive oil cooking spray.

  2. In a large mixing bowl, combine the whole wheat flour and old-fashioned oats.

  3. Separate the egg yolks from the egg whites, then add the applesauce, water and egg yolks to the flour and oat mixture and stir until fully combined.

  4. Mix in the blueberries and stir until a thick batter is formed.

  5. Using a stand mixer or electric hand mixer, beat the egg whites to stiff peaks (usually 4-5 minutes on medium-high speed).

  6. Fold the egg whites into the batter to make it a light and fluffy mixture.

  7. Spoon the batter into the prepared mini muffin pan, filling each muffin cup to the top.

  8. Bake muffins in the oven at 350° F for 25 minutes. The muffins will be browned on the top when they are fully cooked.

  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack.

  10. Once completely cooled, serve to your dog. They will love this healthy and delicious treat!
